For the waffles with chili con carne and chocolate, first make the waffle batter.
For the sweet & salty waffle batter, separate the eggs. Melt the butter in a saucepan, add the milk and heat to lukewarm. No warmer! Crumble the yeast into a mixing bowl, add the milk mixture and stir to dissolve the yeast. Add the egg yolks, salt, sugar, flour and mineral water and mix until smooth.
Beat the egg whites and 1 pinch of salt with a hand mixer until firm. Gently fold the beaten egg whites into the waffle batter. Let the batter rest in a warm place for 20 minutes. While the waffle batter is resting, prepare the chili.
For the chili, heat the oil in a large shallow pot. Saute the onion in it until light brown. Add the mince, chili and garlic and continue to fry until the meat is crumbly and browned. Add the tomato paste and fry briefly. This is important so that the tomato flavor can develop. Add the tomatoes and broth and stir well. Season with cumin, salt, pepper and sugar and cook everything over medium heat for about 20 minutes. Stir occasionally.
Meanwhile, place corn and beans in a colander, rinse and drain well. Add both to the chili and cook everything together for another 5 minutes. Then add the chocolate chips to the chili and stir until dissolved.
Grease the waffle iron and bake the waffle. Spread the chili on top
