For the veal fillet in potato coat, trim the veal fillet and rub with salt, pepper and mustard. Peel the potatoes and slice them very thinly with a cucumber slicer.

Spread out a large piece of aluminum foil and layer the potato slices like bricks. Place the veal fillet on top and roll up very tightly.

Place the meat foil packet in the refrigerator for 30 minutes and then remove the aluminum foil. Heat the clarified butter until hot and add the garlic cloves and rosemary.

Sauté the meat until the potatoes are golden brown. Place the pan in the oven and finish roasting at 150 °C for about 5-10 minutes. (Core temperature: 60°)
