Instructions:

Chop the squid into small pieces and quickly brown lightly in olive oil. Chop the onion, add it and sauté for 1-2 minutes.

Dip the tomatoes briefly in hot water, peel, halve and remove the seeds, then chop. Add to the onions.

Chop the garlic cloves and add them with the bay leaves, the seeded and chopped chili and a pinch of sugar. Cover and cook on the stove for an hour and a half on low heat.

Just before serving, add the basil. Season a little more with salt and pepper.

Serve the squid with fresh white bread.
