Instructions:

For the beef soup with semolina gnocchi and vegetables, cover the bones with cold water in a pot, bring to a slow boil, skim, add the meat. Simmer gently for about 2 hours (let it simmer!).

After about 1 hour, remove the meat from the soup. Cook the vegetables for the last 20 minutes. Remove the vegetables and cut into slices. Season the soup with salt and nutmeg and strain through a fine cloth or sieve.

Semolina dumplings: Cream butter with spices. Gradually beat in the egg. Fold in the semolina and let the mixture swell for about 30 minutes. Form dumplings with two spoons and let them stand in boiling salted water for about 10 minutes. Cut the meat into thin slices and arrange them with the root vegetables on the soup plates. Put the semolina dumplings on top, fill up with soup and sprinkle with chives.
