Preparation (circa 50 min):

Cut the leg of hare into pieces, sprinkle in lightly mortared peppercorns, clove, juniper as well as a tiny bit of rubbed thyme, drizzle with a tiny bit of olive oil, marinate. Then fry well in hot olive oil, add paradeis pulp, sprinkle with flour, mix in, fry briefly, extinguish with grape juice, fill up with clear soup, let it boil, add bay leaves and simmer for about 40 minutes.

Rub mushrooms well with kitchen paper, cut into slices, sauté in hot olive oil. Add the cranberries, sauté and add to the ragout. Refine the ragout with whipped cream, season to taste.

Roast the potato noodles in hot olive oil until golden, season with salt and pepper. Arrange the ragout in a deep plate, spread the potato noodles evenly over it, garnish with thyme.
