Instructions:

For the spelt sourdough bread, mix spelt meal (1) and caraway seeds with warm water (1) to a paste. Cover the baking bowl with a kitchen towel and leave in a warm place (oven with the light on) for 2 to 3 days.

When the porridge is loose, has formed bubbles and has a fine sour smell, add spelt meal (2) and warm water (2). Leave to stand for one day.

Add spelt meal (3) and warm water (3), let stand one night.

For the bread, mix the sourdough starter with water (4). Add spelt meal (4), ground caraway seeds and salt.

Knead everything together and bake the spelt sourdough bread at 250 degrees for 15 minutes and then at 200 degrees for another 50-60 minutes.
