For the spelt semolina casserole with apricots, boil the spelt semolina and butter with a pinch of salt and the ground vanilla in the rice milk and mix for 2 minutes until a creamy paste.

Set saucepan aside, let cool. Pit and quarter (or halve) the apricots and set aside as well. Beat the egg yolks with the sugar until well frothy. Beat the egg whites with a pinch of salt until firm. Then mix egg whites, yolk mixture and semolina porridge and fill a buttered baking dish halfway with the mixture. Now spread the apricots on top, it doesn’t matter if they sink in a little. Then pour the rest of the mixture over it and bake the spelt semolina casserole with apricots at 160-170 degrees (hot air) for 30 minutes.
