For the ribbon noodles with morels, clean the morels thoroughly and cut them into pieces. Dice the spring onions and sauté in a little oil.
Add the morel pieces and sauté for a few minutes. Add soy sauce and simmer for 5 minutes. Add Ajvar and parsley and season with salt and pepper.
In the meantime, cook the ribbon noodles and mix with the finished morel sauce. Serve immediately.
