For the egg noodles with mushrooms, cook the noodles according to package directions until al dente. Set aside and keep warm. Peel ginger and chop finely. Chop chili finely.

Clean young onion and mushrooms and slice finely. Heat oil in a pan, fry mushrooms and young onion, add ginger, chili, spices and soy sauce and season to taste.

Add noodles and mix well.
