Salmon Slices in Yogurt-Herb Sauce

Divide the salmon into 8 pieces. Peel the onion and cut it in half.

Bring peppercorns, onion, bay leaf spice, juice of one lemon and a small amount of salt to a boil in about 3/8 liter of water. Steam salmon pieces in it for about 10 minutes with the lid closed. Remove and keep warm.

Pour fish stock through a sieve. Measure out a quarter of a liter of fish stock, pour into a saucepan and boil to half. Coarsely chop kitchen herbs. Remove saucepan from heat, pour in culinary herbs and crush in it. Fold in the yogurt. Season to taste with salt and freshly ground pepper.

Served with long grain rice and leaf salad repeatedly a valuable dish.

Our tip: If you like to cook with fresh herbs, it is best to get kitchen herbs in pots – so you always have everything ready!
