Melanzane Bell Pepper Sandwich

Quarter peppers, remove seeds, clean melanzani and cut lengthwise into slices. Gently sauté peppers and melanzane in olive oil. Season with salt and pepper. Briefly sauté the garlic clove cut into slices. Toast the bread. Spread with mayo, season with salt and season with pepper.

On 4 slices of bread, place the melanzane at the beginning, then the peppers and the sliced cheese. Rinse and chop basil and sprinkle on top, cover with remaining bread slices.

Tip: Season the melanzane with salt before frying. This removes water, makes them taste more aromatic and they don’t soak up as much fat.
