Wash, stone and chop the plums. Bring the preserving sugar, plums and lemon juice to the boil. Simmer gently for about 1 hour until the plums break down and the skins are soft.

Bring to a bubbling boil and cook for about 4 minutes. Make a jelly test.

Fill the jam into hot rinsed jars and seal sterile.
