Sift the mixed flour into a wide bowl and make an indentation in the center. Add the sourdough and the yeast dissolved in water according to the instructions and stir with a little flour. Leave the dough to rest for 30 minutes in a warm place with the lid closed.
Season the dough with salt and knead it with the remaining flour to form a dough. While doing this, gradually add the water and work until the dough is smooth. Mix the spices into the dough and leave in a warm place at about 30 °C for 2 hours – until it has doubled in volume – with the lid closed.
Repeatedly knead the dough vigorously and form 10 to 12 patties (about 20 cm ø). Place on a greased , floured tray, flour finely and prick a few times with a fork. Bake in a heated oven (E: 225 °C , G: level 4) for about half an hour.
The patties are done when they sound hollow when tapped on the underside.
Remove and cool.
Press into the desired size. The dough should be 2 to 2.5 centimeters thick.
Let patties rise with lid closed for another 10 min.
Mix egg with sugar and olive oil. Lightly oil fingertips of one hand, close tightly into a row and press into the surface of the dough at intervals of 4 to 5 centimeters parallel lines and then a diamond pattern.
