For garnish:


Prepare salsify and steam covered with a little butter and lemon water for ten minutes. Set aside.

Mix mayo, yogurt, tarragon, lemon zest and juice of one lemon in a bowl. Season sauce with salt, pepper and sugar to taste.

Mix in the shrimp and about half of the salsify, arrange the lettuce in the center of the plate and garnish with the remaining salsify and the North Sea shrimp.

Tip: Use regular or light yogurt as needed!
