Asia Rolls with Beet Dip

Make a paste with a dash of Tabasco, salt and pepper. Place the rice leaves one at a time in a damp dishcloth to soften. Place two sheets at a time, one on top of the other, and coat with the paste.

Peel cucumber and carrots and cut into narrow strips. Roll one crab and two each of cucumber and carrot strips in the rice leaves.

Mash the beet with the remaining curd and balsamic vinegar to make a dip.

Arrange the Asia Rolls on a plate and offer with the beet dip and a small bowl of soy sauce.
