Melt the butter and allow to cool. Stir flour with salt, milk and mineral water. Mix the egg well and stir into the dough with 1 tsp butter.
For the filling, clean the fruit and cut into small cubes, steam with the honey in a small saucepan over medium heat for 2 min until soft. Set aside.
Grease a non-stick frying pan with 1/2 tsp butter each and fry 6 pancakes in turn on both sides for 2 min until golden brown.
Coarsely crush the stewed fruit. Coat the pancakes with it and roll them up. Arrange 3 pancakes on plates and garnish with an ice cream scoop and fresh strawberries.
Tip: Always use an aromatic ham, this gives your dish a wonderful touch!
