Original Tyrolean Bacon Dumplings

For the Original Tyrolean Bacon Dumplings, cut onion, Tyrolean bacon PGI bacon and previously cooked beef into small cubes. Fry the onion and bacon together with some parsley in butter until golden brown.

Rub some garlic into it and then mix it with the dumpling bread in a large bowl. Briefly fry the beef with some butter and parsley and add to the dumpling mixture.

Mix in the warm milk and eggs and let the mixture sit for 15 minutes.

Form the mass into small dumplings and let them cook in salted water for about 15 minutes.

Place the Tyrolean bacon dumplings in deep plates, pour a ladle of soup over them and sprinkle with chives.
