For the millet mince roast with asparagus, first boil the millet in salted water for 10-12 minutes. Drain over a sieve and rinse with cold water.

Peel the shallots and cut into fine cubes. Mix the minced meat with the millet and shallots. Season with thyme, salt and pepper. Mix in the eggs.

Peel the asparagus and cut off the woody ends. Line a 28 x 10 cm cake pan with breakfast bacon.

Preheat the oven to 180 °C. Spread half of the mince mixture over the breakfast bacon, place the asparagus in the center and fill the dish with the remaining mince mixture. Fold in the overhanging strips of bacon. Bake the millet mince roast with asparagus in the oven for 35-40 minutes. Turn out of the mold and cut into 2 cm wide slices to serve.
