Instructions:

For the melanzani quiche, first prepare the dough. For this, mix flour, salt and butter. Add water and knead into a dough. Put the dough in the refrigerator for about 2 hours.

In the meantime, sauté the finely chopped onion in a little oil until translucent. Chop the bell bell pepper, melanzani and zucchini. Add and fry well. Squeeze in the garlic cloves.

Add the chopped tomatoes, season with thyme, salt and pepper – simmer for some time. Preheat the oven to 250 °C. Roll out the dough and place it in the greased quiche dish. Prick the dough several times with a fork. D

sprinkle the bottom with golden semolina (absorbs the excess liquid). Spread the vegetables on the quiche base.

For the glaze, whisk the eggs with the cream and the grated Parmesan cheese. Season with salt, nutmeg and cardamom. Spread over the vegetables.

Bake the melanzani quiche in the oven on the lowest setting for about 30 minutes.
