For marinated grilled tofu skewers, first prepare the marinade.
For this, mix well lemon zest and lemon juice with rosemary, thyme and pressed garlic. Pat the tofu dry, cut into cubes and marinate for about 30 minutes.
Remove the core from the peppers and cut them into pieces. Blanch in boiling water for 4 minutes, then quench in cold water.
Cut the zucchini into cubes as well. Remove tofu from marinade and skewer alternately with zucchini cubes, bell bell pepper cubes and mushrooms on small skewers.
Grill the skewers for about 3 minutes on each side, brushing with the marinade after each turn.
