A simple but delicious cake recipe:

Curd in a kitchen towel form, squeeze the liquid a little bit so that the amount binds better. Rinse and pit the cherries.

Preheat oven to 175 degrees. Beat butter with electric mixer until creamy, separate eggs. Fold yolks with 100g sugar, juice of one lemon and curd into butter. Mix semolina, baking powder and pudding powder, stir into the curd mixture with the cherries.

Whip the egg whites until stiff, adding the remaining sugar. Fold the whipped cream into the curd mixture and empty into the greased springform pan.

Spread amount in the pan until smooth and bake at 175 gad for 70 minutes. If cake gets too dark, cover with aluminum foil. Cool in the mold for 30 min. Remove from mold and sprinkle with powdered sugar.

(It is best to take a large jar of morello cherries and use almost all of them. It is better to have too many than too few).
