For the marinated salmon trout fillets, grate 1 tablespoon of lemon zest, squeeze out the juice. Acidify the fish fillets with the lemon juice. Line work surface with plastic wrap and place fish fillets on it, skin side down.

Finely chop half of the herbs, mix with the vodka, salt, sugar and lemon zest. Coat the fillets on both sides with the mixture, wrap tightly with the cling film and let them sit in the refrigerator for 1 day. Then rinse the fish fillets with cold water and carefully pat dry.

Now finely chop the remaining herbs and sprinkle them on the salmon trout fillets.
