Instructions:

For Marinated Oven Tomatoes, preheat the oven to 200 °C.

Peel the tomatoes. Pour boiling water over them, let them stand for 1 minute and then strain them. When they have cooled down a bit, peel off the skin. Cut the tomatoes in half and place the halves, cut side up, in a shallow, oiled roasting pan. Season with salt and freshly ground pepper.

Peel and finely chop the garlic, sprinkle evenly over the tomatoes, drizzle a few drops of olive oil over the top and sprinkle with dried basil.

Bake the tomatoes on the top rack for 50-60 min, until browned around the edges. Remove from the oven and let the tomatoes cool.

Whisk together the oil and balsamic vinegar and drizzle over the tomatoes. Arrange marinated oven tomatoes with fresh basil and olives.
