For the sushi, first wash the uncooked rice under running water until the water runs off clear. Cook the rice on low heat for 12 minutes.

Let the cooked rice cool on a flat plate for 10 minutes. Mix rice vinegar with salt and sugar and pour over the rice. Mix well with a wooden spoon.

Form the rice into plum-sized balls. Cut the salmon to fit, or preferably buy it already cut. Spread a little wasabi on a rice ball and press the salmon on top.
