PreparationChop the garlic cloves and roast them in 4 tbsp olive oil until golden brown. Add the pizza tomatoes, dried chili pepper and dried oregano. Simmer on low to medium heat for 15- 20 min. Season with salt and pepper.
Cut the melanzane diagonally into 1 cm thick slices. Brush a baking sheet with 2 tbsp olive oil, place the melanzane slices on it and brush with 2 tbsp olive oil. Bake in the heated oven on the second rack from the top at 200 °C for 15-20 minutes (convection oven not recommended). Season with salt and pepper.
Cut the goat cheese into as many slices as melanzane slices. Remove melanzane from heat, top with cheese and bake for another 2-3 min on second rack from top until cheese melts. Stack several slices of melanzane. Serve to the table with the tomato sauce and baguette.
