Heartily squeeze the curd in a clean kitchen towel, then prepare it together with the crumbled feta cheese and sour cream in a hand mixer until smooth. Or spread the curd and cheese through a sieve, then mix with the sour whipped cream. Peel the garlic cloves and shallots, press the garlic through the press, chop the shallots. Rinse the parsley and chives. Chop parsley and cut chives into rolls. Stir into the cheese mixture and season with thyme and salt. Line 4 pieces of plastic wrap each with paprika, pepper, rosemary needles and lavender leaves. Place 1/4 of the cheese mixture on each and shape into round hand cheeses using the plastic wrap. Sprinkle with the remaining herbs or spices and press them firmly with the foil until smooth. Place the cheese in the refrigerator for a few hours. Remove 15 min before serving. These cheeses are delicious with all kinds of hearty bread or with fresh white bread.
