For the herb bread, first coat a baking tray with oil. Melt the butter in the water and dissolve the yeast in it. Sift the rye flour with half of the wheat flour into a bowl and mix with salt. Knead with the butter mixture to form a smooth dough. Cover and let rise for 45 minutes.
Mix the remaining flour and herbs into the dough, form a flat loaf and poke a hole in the center of the loaf with a wooden spoon. Cover and let rise for another 20 minutes.
Bake the herb bread in the preheated oven at 190 °C convection oven for 25 minutes. Place a pot of water on the bottom of the oven.
