For the chocolate mousse, beat the egg whites until stiff. Whisk the egg yolks and sugar until foamy, stir in the cocoa and Amaretto. Fold in the melted (no longer hot) chocolate and the whipped cream.

Then carefully fold in the egg whites. You can now fill the mousse into glasses or leave it in a large bowl and then cut out dumplings.
