Grilled Salmon on Spinach and Celery Puree

A bean recipe for every taste:

exceptionally quick and refined / duration of preparation: about 20 min.

Clean, rinse and chop the celery. Cook in boiling water for about 15 min. Drain the beans, add to the celery form and mash both to a puree. Add chives, juice of one lemon, nutmeg, salt and freshly ground pepper to taste.

While the celery is cooking, preheat the broiler. Coat the salmon with a thin layer of olive oil, season with salt and pepper and grill for about 4 minutes on each side.

Rinse and clean the spinach, place it in a saucepan while still moist and heat until it collapses. Arrange the celery puree on a plate, put the spinach on top and place the salmon on top. Drizzle everything together with the balsamic vinegar, season with salt, season with pepper and garnish with chive stalks if desired.
