Skin the tomatoes, layer them in jars (with rubber ring and clamp).

Between each layer sprinkle a tiny bit of sea salt and a few clean basil leaves. Seal the jars. Place a wire rack in a large saucepan so that the jars are not directly on the bottom of the saucepan. Place jars in and pour enough water so that the water is as high as the jars are filled with tomatoes. Bring the water to a boil and cook at a low temperature for about an hour. Leave the jars in the hot water for about 15 minutes. Then remove and cool.

Tip: The tomatoes are ideal as a pizza topping or as a ready-made tomato sauce with pasta.
