Fish chops cooled, rinse and dry with kitchen roll. Sprinkle with juice of one lemon and pull for 10 min. Salt and turn in flour to the other side. Heat clarified butter and roast fish over medium heat for 5 min. on each side. In the meantime, drain the tangerines and pineapple chunks. Collect the juice in the process. Cut the banana into slices. Remove the salmon from the frying pan and keep warm. Add the fruit to the frying fat and heat briefly. Season with curry, salt and pepper. Pour the wine and season with sugar and a little fruit juice. Serve the fish chops with the fruit.

Serve with saffron rice.

Tip: Instead of clarified butter, you can also use butter in most cases.
