Instructions:

A great pasta dish for any occasion:

Spread mustard on both sides of meat, add 1 sage leaf on each side under the string.

Heat clarified butter in frying pan, reduce temperature, sear meat in batches on both sides for about two min each, remove, season.

Dab remaining drippings with kitchen roll, perhaps add a little clarified butter. Sauté onion and garlic, add tomato puree. Add carrots and leek, continue to steam for about two minutes. Add wine and soup, bring to boil, reduce heat, add onion and meat. Cover and simmer at low temperature for about one and a half hours. Remove meat and onion. Grind a third of the vegetables with a little liquid, mix into the remaining sauce. Add the veal breast slices again, just until hot.

Go well with it: pasta or mashed potatoes
