Remove skin from tenderloin, slice lengthwise and tap a small amount.
Season moderately with country sirloin seasoning. Cut through ham and spread evenly on top of tenderloin. Sprinkle a little cheese on top, gently fold and pin together.
Fry in a frying pan until crispy on both sides, remove and sauté the finely chopped onion and garlic cloves until translucent, add water. Add meat stock paste and fill in the fillet.
Cook in the preheated oven at 200 degrees for 1/2 hour. Baste three to four times during the cooking time.
Make the spareribs according to the instructions and fill them into a preheated ovenproof dish and keep warm.
Take the fillet out of the oven, thicken the sauce a little bit, add whipped cream and wine and season with the seasoning of the country loin. Cut fillet into four large or eight small pieces. Place on the spareribs kept warm and spread the sauce evenly over them. Sprinkle the remaining cheese on top and bake for another 5-10 minutes.

Tip: It is best to use your favorite ham – then your dish tastes twice as good!
