For the figs in sweet vanilla wine batter, separate the eggs and beat the egg whites with a pinch of salt until semi-stiff. Now slowly sift in the sugar and beat the egg whites until very stiff.
Mix white wine, flour, pulp of a vanilla pod, olive oil and yolks until smooth. Gently fold in the beaten egg whites.
Remove the skin from the figs with a sharp knife and turn them in the flour. Tap off any excess flour. Then lift the floured figs into the wine batter with a soup spoon, submerge completely and remove. Allow dough to drain briefly. Then bake the fruit in 160 °C hot oil until golden brown and dab off fat with kitchen paper.
Sprinkle figs in sweet vanilla wine batter with powdered sugar and serve warm.
