For the dandelion honey, shake off the calyxes well and pluck the flowers. Boil the flowers with the water and leave overnight.

The next day, strain through a cloth or fine sieve into a new pot and mix with the remaining ingredients. Simmer slowly (a few hours), stirring constantly, until a viscous mass is formed.

Pour the dandelion honey while still hot into a boiled jar and seal.
