For the crepes with curd nut filling, first prepare the crepe batter from eggs, milk, flour and salt.
Then heat the oil or clarified butter in a coated pan and fry paper-thin crepes. (Dough is enough for about 4 pieces)
For the filling, stir the curd until smooth and mix with the walnuts and maple syrup. Spread the filling on the crepes and roll them up.
Garnish with a little maple syrup and a few walnut halves.
