Remove the skin from the onions and chop them finely. Heat the butter in a saucepan and sauté the onion until translucent. Remove the skin from the garlic, quarter the cloves lengthwise and sauté briefly. Stir in the flour and cook until golden. Add the beef broth and the double cream and simmer for about 20 minutes at medium heat. Preheat the oven to 250 degrees. Toast the baguette slices. Mix the soup with a blender, season with salt, pepper, nutmeg and the juice of a lemon and pour through a sieve into cups. Place the bread on top, sprinkle with cheese and bake in the oven (center) or under the broiler until golden brown. Sprinkle with a little oregano before serving.
