Lightly fry the pine nuts in a dry frying pan without adding fat. Do not chop too finely. Chop the tomatoes into small cubes and the olives into slices. Finely chop the parsley. Mix all these prepared ingredients with the cream cheese and season with salt and pepper.

Place the toasts on a baking tray. In the middle of the oven heated to 250 degrees or top heat, fry briefly on each side until golden brown. Let cool for a moment.

Spread the slices of bread with the cream cheese mixture. Place two pieces of bread on top of each other, coated side down, and cut in half crosswise or alternatively into quarters, depending on how they will be used. If you serve the toasts as a small dish, lettuce is a good choice.
