For the curd strudel, first prepare the strudel dough. For the strudel dough, knead a dough from flour, salt, yolk, vinegar, oil and water.

Knead the dough until it is smooth. Brush with melted butter and let rest, covered, for 1 hour. Roll out dough on a floured cloth, turn out and coat with filling.

For the filling, melt butter, roast semolina and spread on the rolled out strudel dough. Sprinkle the strained curd cheese on top.

Roll up the strudel, divide into 10 cm pieces and cook in a pot of salted water for about 15 minutes. Remove the curd strudel and serve.
