For the smoked trout mousse, finely mince the fillet and mix well with cream cheese, horseradish, cress, mustard, salt and pepper.

Cut the bread into 1 cm thick slices and cut out with a flower cutter.

Pour the fish farce into a piping bag and squirt onto the bread. Finally, garnish with fresh dill.
