Take a little bit of milk and mix the starch, cocoa and egg yolks with it. Bring the remaining milk to a boil with a pinch of salt and the sugar. Then, while stirring, add the starch mixture and bring to the boil one more time. Never forget to stir! Allow the grated chocolate to melt into the liquid. Remove the saucepan from the heat.

Whip the egg whites until very stiff and mix them into the mixture without letting them get fluffy. While the soup is cooling, keep whisking briefly one more time to prevent a skin from forming.

Whip the whipped cream with the vanilla sugar until stiff and use it to bring the cooled portions to the table.

Tip: Feel free to use better chocolate – the more delicious the result!
