For the sour cherry strudel, wash and pit the sour cherries. Melt the butter and fry the breadcrumbs in it. Add the cinnamon and cardamom to the crumbs.

Mix the sour cherries with the honey and add to the breadcrumbs. Leave to stand for about 1/2 hour. Since the sour cherries leave a lot of juice and the crumbs soak up the juice. It should not be a liquid filling.

Roll out the puff pastry, fill with the sour cherry mixture, fold and brush with milk. Bake according to instructions.
