For the bread soup, finely chop the leek, sauté briefly in a pot with some lard. Add the brown bread cut into cubes and let it roast briefly.

Pour in 1 liter of beef broth and simmer for about 15 to 30 minutes. When serving, sprinkle the bread soup with some finely chopped chives.
