Soak the beans for one night, pour off the water. Together with the beef jerky in a pressure cooker form, cover well with water, add stock cubes and cook for about 1 hour. Season with pepper, salt and spices. Continue to simmer gently.
Make the long grain rice as usual. Cut the bacon into cubes and fry in a frying pan until well rendered. Then add the mandioca flour and toast lightly.
Everyone gets long grain rice first, then of the beans with the jerky and mandioka flour of choice. The mandioka flour looks like fine breadcrumbs and tastes slightly sweet.
Depending on your personal taste, you can add some cooked kale. It is not cooked with the beans. You can also add ribs or other meat, it does not have to be jerky.
Preparation about 1 1/2 hours
Our tip: Use bacon with a fine smoky touch!
