Lightly heat the sunflower oil or other vegetable oil in a saucepan (not smoking). Cut the thai chiles and habaneros into rings (do not remove the seeds) and add them to the oil together with the cinnamon stick, the pepper and pimento seeds and the annatto seeds and simmer for 10 minutes, making sure that the oil is not too hot. The chiles should not burn darkly but rather be sautéed.

The mixture 3 days cooled pull through and then filter off – great color – dried Piris in the bottle form and the filtered oil and the sesame oil over it pour, bottle shake.
