For the berry cold dish, wash currants, drain and grate the berries. Wash and dry raspberries, wash and halve gooseberries. Strawberries wash and halve or quarter. Wash and drain blueberries. Peel ginger and finely chop into cubes. Pluck mint leaves.

Mix ginger with vanilla sugar and honey. Stir in coconut milk, apple juice and currant juice. Now fold in the berries and add ice cubes – refrigerate.

Decorate the berry cold bowl with mint leaves and serve cold.
