Peaches are mild and low in acid. Almond kernels provide valuable fatty acids. Both in combination are suitable as a small dessert. They can be used as a fruit ingredient for yogurt or curd cheese – or as the basis for a porridge. They are sweetened with maple syrup, because even small amounts add a lot of flavor.
Cover the almond kernels with water, let them boil and then cool them. Press them out of the shell and grind them in a compact blender. Also blanch (scald) the peaches with boiling hot water, steep for 2 min, then peel. Add the almond puree and puree briefly with the juice of one lemon and maple syrup.
