Instructions:

For the avocado salad with white tomato mousse, chop the tomatoes and season with salt, pepper and sugar. Add gin, lemon juice and balsamic vinegar and puree everything with a blender. Pour into a straining cloth, tie it and let it drain overnight. The amount should yield about half a liter of juice, depending on the tomatoes.

Season the tomato juice, warm it slightly and dissolve the cold soaked, squeezed gelatine in it. Place on ice and whisk until frothy. Before it begins to gel completely, fold in the whipped cream.Pour into molds and refrigerate.

Peel the avocado and cut into slices 3 mm thick.Marinate the avocado salad with white paradeis mousse with lime juice , salt, white pepper from the mill and olive oil.
