Make the pita dough, rest one to 120 minutes. Knead well. Roll the dough into 1-2 cm thick sausages, 20 cm long. Form each piece into a ring. Brush the rings with beaten egg yolk (dilute with a tiny bit of water). Pour sesame seeds into a shallow dish and dip the bread rings into the sesame seeds.

Immediately place on a saved baking sheet. Cover the baking sheet with a crockery hangl and place in a warm place. The rings should rise to twice their volume. Bake them in the heated oven at 225 degrees Celsius for about 15 min. Then reduce the heat to about 150 degrees Celsius and dry the bread rings in the oven for another 15 min. They should sound hollow when tapped with a fingernail.
