Soak the rolls or white bread in cold milk, squeeze well. Strain the cooked egg yolks with the white bread through a sieve, add powdered sugar, salt, pepper, vinegar and oil and mix well to obtain a creamy sauce. If it is too dry, add a little more oil. Season to taste and add the chives just before serving.
